Pork Processing Instructions “Cut Sheet”

If you’re not familiar with the pork processing/packaging options, use this as a starting point. You can customize any way you’d like but it’s nice to have something to start with.

Blessing Falls Farm recommended whole/half hog cut sheet:

all vacuum wrapped, except ground which is in thin plastic sleeves

Ham: cured: sliced med. thick, 1 slice per package;

Bacon: cured sliced medium thickness, 1 lb per pkg

Pork Chops: 1” thick, 2 per package; trim to leave 1/2″ fat on
separately label ends and center

Shoulder: all roasts, max 3 lbs each; label Boston Butt vs. Picnic

Spare Ribs: cut in half, half rack per package

Sausage – None (or get some with your choice of mild/spicy seasoning)
Ground – 1 lb plastic wrapped chubs, no seasoning

Hocks: Cured (part of ham but packaged separately)

Jowls: cured sliced medium thickness (cooks and tastes like bacon)

Lard: Yes, want to keep the lard
