Grilling Squash and Cucumbers

Summer garden means a lot of squash and cucumbers.  Grilling is a great way to fix these.  We’re growing Armenian Cucumber this year which can get huge – which makes them ideal for grilling.  Likewise, zucchini is known for its fast growth and any gardener will confess overlooking one for a few days and finding it grown to giant size.

Thankfully, these larger squash and cucumbers are great on the grill.   Slice and season with a brush of olive or avocado oil and use salt and your favorite steak seasoning.  Grill about 6 minutes on a each side over low to medium heat and they’re ready to serve.

Huge summer zucchini and Armenian Cucumber, compare them to the 13×9 dish with pork chops.

Slice Armenian Cucumber in half lengthwise and remove seeds, then slice into wedges. Simply slice the zucchini. Skin stays on for both. Season with salt and steak seasoning, after brushing on olive oil.

On the gas grill, after first turn. Over low/medium flame, turn after 5 to 7 minutes. 10 to 15 minutes total grilling.

After grilling, move to upper rack to keep warm and make room for the main event – pork chops!
